RECIPES

This is our first collection of recipes from our Culinary Adventures in Italy program.

Here are a couple of recipes and Buon Appetito!!!

Risotto with fava beans and puree of sweet peas
Ingredients for 5 people
- Rice 1.1 lb.
- Fava beans 7 oz.
- Sweet peas 3.5 oz.
- Vegetable broth
- Grated cheese 5.30 oz.
- White wine (to wet the rice)
- Extra virgin olive oil
- Anchovy (one fillet)
- Chopped onion, garlic clover
- Salt and pepper
Boil fava beans in abundant salty water. Gently fry in warm olive oil the anchovy and garlic clover. Sweet peas are cooked with chopped onions, add vegetable broth and add salt and pepper to taste. Blend half of the sweet peas into a soft cream. Sauté' the rice with some butter and chopped onions. Sprinkle wine and add vegetable broth to cook the rice. At ¾ of the cooking process add sweet peas, fava beans and the sweet pea puree. Off the burner mix butter and grated cheese to the rice. Garnish the rice with sauté hulled fava.

Strawberry tiramisu'
Ingredients
- Egg yolks 4
- Sugar 5 oz.
- Milk 10 cups
- Pinch of vanilla
- Fish sheet (thickener) 3
- Mascarpone 9 oz.
- Whip cream 9 oz.
- Strawberries 10.5 oz.
- Powder sugar 2.8 oz.
- Pan di Spagna (Sponge cake) 9 0z.
- Strawberry liquor or Maraschino liquor
- Lemon juice
- Strawberries whole to garnish 18
Whip egg yolks and sugar to a thick consistency. Boil milk and vanilla and then add to the egg yolks and sugar gently stirring. Remove from burner and add the fish sheet thickener already softened in cold water. Keep stirring. Let it cool then add mascarpone, stir to obtain a smooth mixture. Add the whip cream. Blend strawberries with powder sugar and lemon juice. Add to taste with strawberry or maraschino liquor. Pour part of the mixture in small pastry molds. Cover with one layer of Pan di Spagna previously soaked in the strawberry cream alternating a layer of Pan di Spagna and one of cream and ending with one layer of cream. Place the molds for 2 to 3 hours in the refrigerator. Place the mold in boiled water and instantly take it out in order to remove the tiramisu'. Garnish with strawberries and the leftover cream.
